Banoffee Pie


makes 6 small or 1 big pie.

150g dairy free digestives biscuits (the McVities lights are dairy free, but also some of supermarkets own brands are dairyfree).
75g Lactofree butter (or dairy free margarine)
2 tablespoons icing sugar
2 teaspoons cinnamon

2/3 portion of dulce de leche (click here for recipe)

3 ripe bananas



Note: the crust and dulce de leche filling can be made the day before serving for convenience.

preheat the oven to 200°C

crumble up the digestive biscuits in a food processor or in a plastic bag beating it with a rolling pin.
transferee to a bowl and stir in the butter, sugar and cinnamon.
press out the pie crust mixture in the pie tin using your fingers and spread it out and up the sides until you get an even thickness all around.
Bake in the oven for 10-15 minutes or until the pie crust stars getting a darker colour.
While the crust is in the oven, start making the dulce de leche.

when the pie crust it finished take it out to cool, and finish the dulce de leche.
Once the dulce de leche is done, pore the amount right for the pie into the cooled pie crust and spread it out to the edges, then allow to cool in the fridge. (up until this part can be made the day before you need the pie).

slice up the bananas and decorate the pie with them.
grate some chocolate on the bananas
whip the cream into whip cream and spread on top of the pie, finishing with some more grated chocolate.

  1. Thank you so much for this recipe! I wanted to make a Banoffee for a friend's birthday tomorrow - he loves it but is lactose intolerant. This was a life (or, rather, dessert) saver :)
